Here comes a big pic of Pain au Levain.


PAIN AU LEVAIN

The other French bread. A baguette is for today. For tomorrow and beyond, this sourdough country boule does the trick.

Bread Stats:

hard red spring wheat flour, levain starter, kosher salt, H2O, yeast 600g

Additional:

The starter (23 years old and counting) was nearly done in by Hurricane Georges but responded, four days later when the power came back on, to extraordinary measures. There's some question whether there was an actual miracle, but it had that feel.
